Hello, Summertime!
This is how we spent a good part of our day yesterday, and it was wonderful!
Looking for some fun things to do now that summer is finally here? I loved this list from Laura Winslow Photography. I have it printed out and hanging on our fridge. You can do the same here!

Oh, yes, I did...
...order this adorable cupcake stand for Frances' first birthday. I just couldn't help myself!
Have any upcoming birthdays (did I mention we have three this month within two days of each other?)? You too can order one of these here.

May I...
...introduce you to this May-o?
Kraft's new Mayo with Olive Oil and Cracked Black Pepper is definitely worth a try! I bought some the other day, and so far I've enjoyed it on several sandwiches. But I have to say my most favorite "recipe" for this mayo is smothered on grilled or roasted corn on the cob. Delicious!

More Firsts...
FEB (Am I the only one who refers to their children by their initials? I don't know if it's because we monogram just about EVERYTHING around here or because at one of my previous jobs that's how we referenced our coworkers in all interoffice communication. Either way, I do it alot. So much so, that I've half decided to rename Kathryn, "Kelby." Get it? KL-B. And Frances, "Pheobe." FE-B. And anyone who's around me long enough knows I call Walker, WGB, a whole lot more than I call him Walker.) Anywho...boy, do I digress...FEB or Frances or Pheobe had her first boat ride this past Memorial Day weekend.
We had a fabulous time in Camden with Nana and Papa, and this little trip down the river late Saturday afternoon was one of the highlights.

She also got some time in the baby pool...
The "big" kids had a ball playing on the extra large intertube...
And Walker walked on water!

Grilled Chicken Tacos
Made these yummy grilled tacos tonight from the April 2011 Southern Living...
Ingredients
* 3 tablespoons olive oil
* 2 tablespoons lime juice
* 4 teaspoons Montreal chicken seasoning
* 1 1/2 pounds chicken breast tenders
* 1 (8-oz.) container refrigerated fresh salsa
* 1 large mango, peeled and chopped
* 1/4 cup chopped fresh cilantro
* 2 teaspoons chipotle hot sauce
* 6 (6-inch) fajita-size flour tortillas, warmed
* Toppings: crumbled queso fresco (fresh Mexican cheese), and shredded romaine lettuce
Preparation
* 1. Preheat grill to 300° to 350° (medium) heat. Combine first 3 ingredients in a zip-top plastic freezer bag; add chicken, turning to coat. Seal and chill 10 minutes, turning once.
* 2. Meanwhile, combine salsa and next 3 ingredients. Cover and chill until ready to serve.
* 3. Remove chicken from marinade, discarding marinade. Grill chicken, covered with grill lid, 6 minutes on each side or until done. Serve in flour tortillas with mango salsa and desired toppings.
Instead of making the salsa, I found this Mango Pico De Gallo at WalMart. I thought it would be easier (and maybe even cheaper) than making my own. It worked perfectly with these tacos. I think it would be safe to say this recipe would also work well with your favorite fish !
