An Egg-cellent Easter

Have I mentioned that I love Easter? And to top all of the fun Easter activities off with an awesome church service on Sunday morning is just one of the reasons this is my favorite of all celebrations!

Of course, we had to tear through the Easter baskets on Sunday morning! Frances was busy doing her norm--crawling all over the place!

We lunched on some yummy dishes: ham, potato salad, corn casserole, potato casserole, strawberry fluff, carrot salad, and asparagus. All of that goodness was topped off by a delicious strawberry cake made by Aunt Mak. Of course, it was all rounded off by lots of Easter candy!

Since it's so easy, I thought I would include the corn casserole recipe here:

Corn Casserole

1 can whole kernel corn, drained
1 can creamed corn
1 box jiffy corn muffin mix
1 cup sour cream
1/2 (1 stick) butter

Mix all ingredients together. Pour into a greased baking dish and bake at 350 degrees for 45-60 minutes or until golden brown. (Note: I only use about 3/4 stick of butter. I found a whole stick to be too buttery, if that's possible:)

Doesn't get any easier than that!
